carnitas cabbage tacos
4-5 lb pork shoulder (or similar)
2 cups chicken stock
1 tsp garlic powder
1 tsp cumin
1 tsp salt
½ tsp oregano
½ tsp chili powder or cayenne
(honestly i probably used twice as much in the spice department so modify as you like)
cabbage (halved, cored, and pulled apart into cups)
your favorite toppings (we used avocado, onion cilantro, homemade jalapeño chips and a squeeze of orange with black beans on the side)
this one is super easy crockpot recipe! mix up the spices in a bowl. sprinkle them all over the meat and rub in a bit. put the meat in the crockpot, pour the stock in the bottom, put a lid on it, turn it on high and walk away. in four hours turn the meat over and walk away for another 4 hours or so….
….remove the bone and fatty bits, put the meat in a bowl and shred with a fork. before you serve, crisp the carnitas up in a pan, fill the cabbage cups and top with your favorite stuff.
